Since the Steelers were in the Super Bowl this past weekend, and since they are Scott's favorite team, the game was kind of a big deal at our house this weekend. We, of course, were at the Porter parents for dinner, but it was more of a buffet type meal while the guys enjoyed the game and we all enjoyed the commercials.I made the bean dip for the "party" and everyone loved it (at least that is what they said...), but most importantly, Scott loved it. So this is one recipe that we will be keeping and making often. I was pretty proud of it, since I've never made a bean dip before and I was guessing on amounts. I think the cilantro is the best part.
Super Bowl Bean Dip
Ingredients:
1 cup sour cream1 (1.25 oz) taco seasoning
1 (16 oz) can refried beans
1/2 lb ground beef
1 pkg italian sausage
1 or 2 avocados, diced
2 tbls lemon juice
1 tsp garlic salt
1 cup monterey jack cheese, shredded
1/4 cup fresh cilantro, chopped
1/2 cup diced black olives
2 large tomatoes, diced
1/2 cup cheddar cheese, shredded
French baguette and/or tortilla chips
Directions:
1. In a skillet, brown the ground beef and italian sausage together till there is no pink.
2. While meat is browning, in a small mixing bowl, combine the sour cream and taco seasoning.
3. In a separate bowl, combine 1/4 cup of the sour cream mixture with the refried beans (this will thin out the beans a bit).
4. Spread bean mixture in the bottom of a oven safe serving dish. Layer with meat combo then the avocados. Sprinkle the lemon juice and garlic salt over the mixture. Spread the sour cream mixture over the avocados. Layer is monterey jack cheese over the sour cream, the cilantro over the cheese, the tomatoes over the cilantro, the olives over the tomatoes and finally sprinkle the cheddar cheese over the tomatoes.
5. Serve with either the baguette or the chips, both worked well.
Oh yeah, and I guess I should say "Go Steelers" for winning the Super Bowl, even though I was much more interested in making sure the dip turned out...
